The Ultimate Chocolate Chip Oreo Brownie Toffee Treat

This really is the Ultimate Treat!

An amazing combination of choc chip cookie, Oreo's, brownies and then hot toffee sauce to top it off.

As the first entry for my blog I think I went with a good choice because it combines so many delicious chocolately elements with a sticky bar-one-like sauce just to keep them moist and gooey.

I can't claim the recipe as my own, but I did make a few adjustments along the way. Instead of brownie mix I used pre-mixed chocolate muffin mix, and I substituted fudge sauce for toffee sauce as I generally prefer the caramel taste of toffee to fudge.

It starts off pretty simply, just a combination of softened butter and sugar, which you cream together in a bowl for about five minutes.

The next step is adding the eggs and vanilla. Although the recipe calls for vanilla extract, I was a bit cheap and stuck to vanilla essence. To be honest, I don't think it makes such a big difference unless you are cooking for a gourmet restaurant who is fussy like that.

Once you have your basic cookie dough mixture you add the chocolate bits. Again I went for pre-packed chocolate pieces but the next time I am definitely going to use a chopped up slab instead. The chocolate chunks will be bigger and you can invest in a better quality of chocolate. I am not too much of a fan of the average baking chocolate taste.

This mixed cookie dough is then spread evenly on wax paper in a deep roasting pan. As there is so much butter in the dough I didn't see the need to grease the wax paper before hand, but its your choice.

Next step, pushing the oreo's into the batter. This was pretty hard as I had to resist scooping it out with a spoon before it cooks. Raw cookie dough really is that good! And then there are Oreo's with it, come on!

I mixed up a packet of chocolate muffin pre-mix for the brownie layer. I wouldn't recommend this instead of brownies as it is quite a bit dryer than brownie mix and so changes the texture of the final product.

Pour it over your Oreo and choc chip cookie dough and spread evenly. Its super sticky, chocolatey and generally delicious looking!

On the recipe I have it says cook at 180 degrees for 45 minutes. THIS IS WAY TOO LONG! I put mine in the oven for 35 minutes, and even this lead to a burnt crispy bottom. Old school ovens really add a "vintage charm" to the baking experience (read: pain in the ass).

Voila! The final product. Delicious. Next is to make a toffee sauce, and generously douse the squares in it.

Toffee sauce recipe:
  • 3/4 cup treacle sugar (or dark brown sugar)
  • 2 tbsp corn syrup
  • 90g butter
  • 2/3 cup double (heavy) cream
Combine sugar, syrup and butter in a pan and slowly bring to boil, allowing butter to melt and sugar to dissolve.
Leave to bubble for a further 2 minutes before adding the cream.
Cook for 2-3 more minutes.
Pour over while still hot.

Enjoy!
