Its been an exciting past couple of days and I have been all over the place!
In the spirit of colour (being spring and the fact that I have newly dyed pink hair), I decided to make some brightly coloured, very easy, tasty vanilla fudge.
Let this be a warning though: IT IS SWEET!
Like 4 slabs of white chocolate and half a can of condensed milk sweet.
Like immediate-filling-potential sweet.

THE RECIPE
¾ cup condensed milk
340g white chocolate, cut into pieces
3 tsp Vanilla Extract
Rainbow Sprinkles
Combine chocolate and condensed milk in a microwave-safe bowl.
Microwave until the chocolate has just melted (about 2-3 minutes) making sure that the chocolate does not burn
Stir together until completed mixed
Add vanilla essence and mix again
Add confetti sprinkles but do not overmix as they will melt into the batter
Transfer the colourful mix to a tray to dry, the yield is not a lot so a tray about 15cm x 10cm works quite well
Cover with 100's and 1000's and put in the fridge to cool
Once cool, remove and cut into squares
Eat one (or more if you have an extremely sweet tooth)
