Rainbow Love

The weather has allowed me to witness quite a few rainbows in my life recently. I am not complaining. They really are such beauties and have the ability to change the worst of days into happy memories. I saw this lovely one recently which changed into a double rainbow shortly after. I was stuck in traffic after a long day of work and was amazed at the fact that not one other person I saw stuck in their cars got even a glimpse. A personal treat for me!

So I decided to pay tribute in the one way I know best. Baking. 


A delicious rainbow cheesecake.

Over 900g of cream cheese, about an hour of cooking, so much tasting I was on the verge of a cheese coma, and a massive mess in someone else's kitchen later I came out with this treat. 

It took a while to put together as you have to mix layer by later, in a similar way as I did for this post

Starting with a single later of white, you gradually make your way through the separated colours until you have what looks like a child's crayon drawing. 
Luckily it tastes much better.

The recipe from The Food Pusher recommends you cook the cheesecake in a roasting pan of water. I also strongly recommend following this method as it ensures that the cake remains moist and does not over-cook in some areas (i.e.the edges).

There was not enough space in my oven so I was only able to cook one cheesecake at a time, but this worked out better as I was able to resist the temptation of munching through both in one evening.
